Italian cuisine is full of delicious recipes that were born out of poverty and through the ingenuity of housewives. Many of these recipes have recently been rediscovered and can now be found on the menus of various restaurants.
Today, Marta presents us with a recipe born during the Second World War, when it was difficult to find even the commonest of ingredients, especially meat and flour. This is how Potato Lasagna was born, in which pasta sheets normally made with wheat flour are made instead with a sheet of potatoes and breadcrumbs, and the meat sauce is substituted with a vegetable sauce.
