This was the beginning of the preparation of a plate that is very famous in the area of Bergamo that is called Kapu. The word Kapu comes out from the Capone in Italian Caven. It’s a food prepared same as other food in the time with lack of ingredients. The idea was to pretend there were some meat inside but in fact there was no meat.
